Soft Gingerbread Men

2c. brown sugar
4 small pkg. instant butterscotch pudding
4 eggs
6 cups flour
2 tsp baking soda
3 tsp. ginger
6 tsp. cinnamon
Cream butter, sugar and pudding mixes; beat in eggs. add dry ingredients and gently roll
out on floured surface. Cut out gingerbread. Bake at 375 degrees for 15 min. or just until
set. DO NOT over bake. Store while warm in Tupperware covered containers between sheets of
wax paper.
