Camp Menu Ideas

| Submitted by Melissa - Littleton, Colorado The best way I have seen this done (and had the least complaining) was when the girls actually planned AND helped to shop for it. Here are some quick and easy recipes for camp for those just starting out. Please note that NONE of these are my original ideas, just things we have used. Tortilla Pizza's On the table set out tortilla's, pizza sauce, cheese, and any other meats that the girls might add. Have the girls make them however they want and then roll it up. Wrap in foil and put in the fire. Check it every few minutes. These do burn quickly so you really have to keep an eye on them. Frito Pie On the table set out chili (with browned meat in it), Frito chips, lettuce, tomatoes, onion, and cheese. Have the girls start out with the Frito chips on the bottom, then the chili topped by whatever else they want to add. Great for picky eaters. Sandwich Pies There is a metal cooking utensil you have to use for this. We have found them at Wal-Mart. They are square shaped and fit together. I know I am not describing them very well. Basically all you do is heat up coals first. Then you butter the outside of two pieces of bread. You place them in each side of the cooker. You then add a filling. We have used this for sandwiches (so we added meat and cheese), pizza (sauce, cheese, and meat), and also for dessert (pie fillings). You then place in the fire making sure to rotate every minute. Depending on the heat, they usually cook quickly so you need to watch them. I know this sounds like a lot of work but they really are EASY and VERY good! These are just a few but I think the best! Other things we have used are bagel bars, sandwich bars, and fruit bars. Easy, fast and pleases pretty much anyone.

My girls loves them. 2 cans cream of chicken soup, 1 cup chicken broth, 2 cups cooked chopped chicken, 4 cups cooked rice, 1 can (9 1/2 oz.) chow men noodles, 3 med tomatoes chopped, 1 (20 oz) pineapple tidbits drained, 1 cup grated cheddar cheese, 1/2 cup slivered almonds 1/2 cup coconut, 1 can olives chopped, soy sauce. Combine soup and broth in a sauce pan to make gravy. Stir to blend and add chicken and heat to almost boiling. On individual plates have each girl put on what they want. (I put everything)
Dannyel S Crane dcrane32@juno.com Navajo Tacos: These are really easy and a hit with the girls. You get Rhodes rolls and thaw. Then heat oil in Dutch Oven. Smash the roll into a flat pancake and cook in oil. Then top with chili, hamburger, olives, lettuce, cheese,& sour cream or whatever the girls like. They are very filling! Then for dessert you can cook a scone and put butter and honey or jam on them! Taco Salad in a garbage bag: Sounds awful but worked out great on a rainy camp day. We just put all the ingredients for a taco salad -from Doritos Chips to lettuce, cheese and kidney beans to including the dressing-1 bottle of Ranch or Catalina dressing into a large garbage bag- we shook it up and scooped it out! Enchilada Casserole in Dutch oven: flour tortillas, enchilada sauce (mild), tomato soup, Hamburger & onion, cheese, olives-sliced Brown hamburger and onion then add tomato soup, enchilada sauce an/2 the water recipe calls for ex. for my family I use 1 can of each and add 1 can of water . As you make for larger groups add water as needed to thin down. Should be soupy. Layer in Dutch oven--sauce, tortillas, grated cheese then olives then repeat until all ingred are used. Put on coals heat through or a Dutch oven cooker on low for 30 -45 minutes you can also put into oven at home for 45 min. at 350 degrees!
